With less than a week to move house, I started to clear out the fridge and freezer. Today I found some chocolate capelli in the freezer waiting to be dressed in a delicious sauce and some frozen strawberries. Looking into the fridge there are a packet of mascarpone cheese, some Baileys, and a tub of thickened cream. Perfect to make a quick and easy dessert!
I will share the recipe for my Baileys Mascarpone Sauce this time. As the pasta, you can use any chocolate pasta available and cook it according to the directions on the packet. Or if you have enough time, you can make your chocolate pasta yourself! Makes it even more perfect!
This sauce is very versatile, you can use it to top either hot or cold pudding, serve as dipping sauce with fresh fruits, or simply treat it like custard.
So here’s the recipe…
BAILEYS MASCARPONE SAUCE
300 ml thickened cream, 200 gr mascarpone cheese, 3 tbsp caster sugar, 5 tbsp Baileys
Combine the first three ingredients in a heavy-bottom saucepan, and simmer on medium heat until well mixed. Cool down to room temperature and add the Baileys. Mix well.
